For my first cooking class, I wanted a Belgium inspired menu. One of typical Belgium starters is tomato with grey shrimps and mayonnaise. As it's not the season for tomatoes, I created this recipe with avocado, grapefruit and shrimps and gave it an Asian twist adding wasabi to the avocado puree and seasoned the dish with an Asian inspired seasoning.
Well done to my participants for this first try! As I don't eat fish neither seafood, I couldn't try it but they all seemed to be more than satisfied with it!

Ingredients for 4
people
150g grey shrimps, peeled
2 avocados
1 grapefruit

3 tbsp lemon juice
1 teaspoon brown sugar
1 tbsp olive oil
1 tbsp sesame seeds
1 tbsp soya sauce
salt
pepper
optional : wasabi

Slice the peel off the grapefruits and release the
grapefruit segments on top of a bowl to get the juice for the seasoning.
Prepare the seasoning : mix the juice with salt and
pepper, olive oil, soya sauce, sugar and 1 tablespoon of lemon juice.
Cut avocados in half. Remove seed. Scoop out avacado from
the peel, put in a mixing bowl. Using a fork, roughly mash the avocado. (Don't
overdo it, The guacamole should be a little chunky.) Add the lime or lemon,
salt and pepper, wasabi if you like it and mash some more.
Arrange the avocado puree at the bottom, add grapefruit on
the plate or the glass. Put schrimps on the top. Pour the seasoning and
sprinkle with sesame seeds.
My tip : for a better display of your dish, use small pastry circles that you will in with the different preparation.
