Pizzalicious : spinach pizza with cashew nuts and rocket, soooo tasty! (EN)


After having tried this new recipe,  I feel like I’m addicted and could never eat another pizza.

A thin and crusty dough, a topping made of spinach flavoured with nutmeg and some cashew nuts, rocket and parmesan to add some “spicy melting crunch” (a new expression especially designed for the occasion). That pizza definitively rocks!

Ultra generous in taste, you won’t be able to say no to another serving! And another advantage is that it is also very quick to prepare (and to eat, haha). I trust you to find other delicious combinations, send me a picture of your favourite homemade pizza with its recipe and I would be happy to publish it!


Ingredients for 4 people  

Dough 

200g flour
5 teaspoon olive oil
1 teaspoon aromatic herbs (you can choose whatever you want or have at your disposal)
75cl warm water
1 pinch of salt

Topping 

400g frozen leaves spinach
1 teaspoon nutmeg
10cl soya cream
1 handful cashew nuts
1 handful rocket
100g shaved parmesan
1 pinch of salt and pepper

Preheat your oven to 180°.  In a bowl, mix together flour, salt and herbs. Add then olive oil and stir with a fork. Then add little by little the warm water and knead the dough until you get elastic and smooth dough (stop adding water when you get the right consistency).

The dough should still feel moist and slightly tacky. If it's sticking to your hands, work in more flour one tablespoon at a time until it's smooth and silky.

Roll it out on prepared baking sheet. Let it bake it until slightly golden (5 min.), while you prepare the topping. This is to avoid the dough to get too wet when you will add the topping.

In the meantime, warm up the spinach in a saucepan.

Once they’ve melted, add the cream and nutmeg. Season with salt and pepper and let it cook for 5 minutes, stirring from time to time.

Remove the dough from the oven. Top it with the spinach mixture and top it with the crushed cashew nuts, rocket and parmesan. Bake the pizza for 20 minutes, until the cheese turns gold.

Remove your pizza from oven and enjoy!

Next time I would like to organize a pizza party. This means everyone will get dough I would have prepared in advance, a large choice of ingredients at disposal and everyone who could make his own favourite pizza!

 My tip : I’ve used for the first time a dish especially tailored for pizza, with holes which enables to get a crusty pastry, as we like them.
